dc.description.abstractThe effect of gamma radiation on selected chemical, physical and microbiological characteristics of three egg white proteins have been studied. Lysozyme, ovalbumin and conalbumin substrates were extracted from egg albumen, purified and used in this study. Two strains of P. fluorescens which had been isolated from milk and eggs were characterized and used for testing the microbiological growth support characteristics of the three proteins. ...en
