Designing Eggs for Better Nutrition
Abstract
Through improved diets of laying hens, eggs are more nutritious than ever. Hens fed diets rich in polyunsaturated fats (PUFA) lay eggs that are also rich in these essential nutrients. Two PUFA-rich eggs contain as much of the essential omega-3 fatty acids as a 3.5-ounce serving of lean fish, and at a fraction of the cost. PUFA-rich eggs taste and cook like any other eggs and can be used in any egg recipe.
