dc.description.abstractThe purpose of this thesis is to examine the rapidly growing gluten-free food market. We will attempt to better understand the impacts on traditional economic factors on gluten-free products as well as to better understand the health and nutritional benefits of a gluten-free diet. Based on data received from the Kilts Center for Marketing at the University of Chicago Booth School of Business, we will be able to study consumers purchasing habits regarding five unique gluten-free products from four food categories. These data will provide insight as to how the demand for these gluten-free products has changed over time and will give us the ability to make future predictions. Another aspect of this research will focus on the health and nutritional characteristics in regard to maintaining a gluten-free diet.en
