dc.description.abstract | Investigations were conducted on moisture removal from high moisture freshly harvested rough rice under different flash-drying screen temperatures for different exposure periods. Other observations of effects on shelling, fissuring and germination of rough rice were made after grains were subjected to different flash-drying treatments. The results indicated that moisture removal from rough rice is dependent on exposure period, flash-drying screen temperature and initial moisture content. Exposure period had the greatest effect on moisture removal from rough rice. In general, moisture removal increased as flash-drying periods increased. Coefficient of shelling and coefficient of wholeness of kernels were significantly affected by the number of flash-drying passes to which the rice samples were subjected with or without tempering periods. The drying screen temperatures had a significant effect on the coefficient of shelling but not on the coefficient of wholeness of kernels. In contrast, initial moisture content contributed to the significant effect on coefficient of shelling.
